Children used a variety of fruits and vegetables ranging from avocado, peppers, blueberries, peppers, zucchini and apples to make "Guacamole Witches", "Apple Mummies" and "Green Pepper Jack-o-lanterns" filled with zucchini pasta.
Children made salads from basil, tomato, mozzarella and a balsamic drizzle. The heart shaped tomatoes, the sticks, and the drizzle all made this snack extra tasty and fun for the kids.

Art of Healthy Eating exposes children to fresh fruit and vegetables in creative and fun ways and more importantly teaches children the importance of consuming a variety of fresh produce. Working with AHE over the past year, I have been most struck by the disconnect between what children are actually willing to try and eat and enjoy and what parents believe that their children will try and eat and enjoy. Of 22 children in one particular AHE class spanning nine sessions, 21 children tried all of the food items and approximately ten children requested seconds in each session.

I had the pleasure of having the Art of Healthy Eating at the Haggerty Preschool this past school year. Healthy eating was made fun by introducing new foods in a fun and interesting way. The mantra of "eating the rainbow" was used throughout the school year to help the preschool children better identify with the healthy foods they eat each day. Through parent workshops Rosanne helped families learn of cost effective ways to "eat clean" and shared some great tips and tricks for helping children enjoys fruits and vegetables.

Overall, I would highly recommend this program to teachers, children, and families. The connection children form together when preparing and discussing food impacts their overall food choices. It is an extremely powerful program that benefits all children who are lucky enough to participate. We look forward to the potential of continuing our relationship with the Art of Healthy Eating to provide continues access for our students.
